Dinner tonight was a chicken-and-rice casserole, recommended by the ever-lovely [livejournal.com profile] serenabuny. It came out good, though I think it had a bit too much rice and a bit too little mushrooms. And it needed salt. I shall remedy all that the next time I make it. For those of you keeping score at home, the recipe to use is:

-2 boneless chicken breasts
-2 cans of Cream of Mushroom soup
-1.5 cups of rice
-3 cups of water

Throw it all into a casserole dish, and cook in a 450-degree-preheated oven for approximately 40 minutes. I haven't used that exact recipe (I had 1 can of soup, 2 cups of rice, and 4 cups of water), so I can't yet say exactly how it'll turn out, but it's just a matter of sizing. I think this would feed two people (I'm making two meals out of it), maybe three if you're little people.

I also think it might be better if you sliced the chicken and spread it more-evenly through the casserole, but it all ends up in the same place, anyways.

Tonight for dinner we had pot roast and yummy potatoes with corn and peas.
Recipe for my hungry, growing boy:
-1 eye of the round roast (1/2 lb. : 1 person)
-3 slices chopped onion
-1 can chicken broth
-rosemary
-olive oil
-salt & pepper
-2/3 cup of red wine (merlot is pretty good)
-cubed potatoes (1 potato : 1 person)

Ok. Take a big pot and pour olive oil in til about 1/2 inch thick. Put in onion, rosemary, salt & pepper, and roast. Medium/High heat-- brown the roast in the oil for about... 3-5 mins.
Pour in chicken broth and wine. Cover, reduce to simmer.
Cook about two hours, flip roast every 15-20 mins.
Half hour before the meat is done, take the potato cubes and put them in the pot.
Poke the potatoes every so often to make sure they are soft. Poke the roast every so often to make sure no blood is spurting out.
When done, carve roast into slices and use some liquid from the pot as gravy.
It's not the healthiest thing in the world, but if you do it right it's pretty damn tasty. Just make sure the liquid in the pot doesn't cook off. You can add water if it starts to.
I don't know if that sounds appealing to you, but everyone tells me it's their favorite Mama Nifer dish.

That sounds absolutely delicious. Next time I get out to the store, I'll see about picking up the ingredients.

I told myself I'd make a habit of having a glass of red wine with dinner while I was out here. i've yet to even buy wine. I shall have to remedy this.

No such thing. In fact, it is my considered opinion that life would be much better if we ceased munching on those nutritionless little decomposers altogether. My life, anyway, would be much better.

Just a thought, I have done this, try using cream of mushroom with roasted garlic instead of just plain cream of mushroom, I think campbell's is the only company that makes this type, but it is delicious it adds a good kick to the meal, and I always add an extra can of mushrooms.
